
After the war's end, the lingering tension of oppression filled the streets and air, yet a new sense of freedom inspired daily celebration. At his Harry’s Bar, opened just seventeen years earlier, Giuseppe Cipriani envisioned a cocktail honoring peace. He crafted a refreshing drink highlighting the sweet, fruity essence of peach pulp. When an exhibition dedicated to Giovanni Bellini took place at the Doge’s Palace in St. Mark’s Square, Cipriani found a perfect harmony between the artwork’s colors and his cocktail’s spirit, culminating in the creation of The Bellini.
