
Dalton Paradisia is an orange wine from Dalton Winery in Galilee, Israel, made primarily from Muscat of Alexandria with about 10% Colombard. The wine is fermented on its skins for seven months, giving it a golden color, complex texture, and notes of tropical fruits, honey, and salinity. It is soft and balanced on the palate, with a slightly salty finish. Paradisia is certified kosher (including for Passover) and is best served chilled at 10–12 °C, pairing well with fish, seafood, and sushi. Dalton also produces “Anna – Liqueur de Paradisia,” a sweet Muscat liqueur-style wine with floral and apricot flavors, ideal as a dessert wine.
