Michel Thomas & Fils cultivates 40 distinct vineyard parcels across four villages, spanning a total of 17 hectares—11 dedicated to Sauvignon Blanc and 6 to Pinot Noir. The grapes thrive on three unique soil types: 40% Terre Blanche Argilo-Calcaire, offering a mineral-rich foundation; 40% Caillottes Calcaire, contributing to the wine’s finesse; and 20% Le Roc Silex, which adds a subtle smoky character. The grapes undergo traditional vinification in carefully temperature-controlled vats, preserving the varietal’s purity and freshness. This 2023 Sancerre is best enjoyed alongside fresh fish dishes but also pairs beautifully with an aperitif or the region’s famous Chavignol cheese, showcasing its versatility and refined mineral profile.
