The Psagot Blanc de Blanc represents a pioneering achievement as the first sparkling wine made from Israeli mountain grapes using the traditional method, reflecting the distinguished terroir similar to France’s Champagne region. Crafted from handpicked Chardonnay grapes harvested during cool night hours in the Jerusalem mountains, it begins with six months of fermentation in stainless steel, followed by secondary bottle fermentation. Aged for six years on yeast before disgorgement, this wine offers a refined elegance and a complex, graceful bouquet featuring notes of apple, melon, citrus, and delicate pastry aromas. Ideal as an aperitif, it pairs beautifully with cheeses and fish or can be savored alone for a sophisticated indulgence.
