Established in the 19th century, the Domaine is now under the care of Pauline Pabiot, the fifth-generation winemaker who assumed leadership in 2017 after years learning from her grandfather. Recognized with the prestigious "Haute Valeur Environnementale 3" environmental label, the Pabiot vineyards are uniquely situated across from Sancerre. Their Coteau des Girarmes Pouilly-Fumé delivers intense aromas alongside a refreshing, dry, and well-balanced palate, marked by vibrant acidity, classic flinty character, and a refined finish. Notes of green apple, grapefruit, melon, pear, lemon, minerals, and hazelnut make it an excellent companion to seafood, roasted chicken with vegetables, or goat cheese.
