Teperberg Inspire Art Series Dabouki is crafted with meticulous attention to detail, starting with Dabouki grapes carefully harvested in the early morning hours to ensure optimal freshness. The grapes are promptly chilled to 12°C and gently pressed to maintain the fruit’s integrity. The must undergoes clarification in a chilled stainless-steel tank using a flotation pump technique that employs nitrogen micro-bubbles to separate sediments, resulting in a pristine wine base. Fermentation occurs at a controlled 14°C to enhance aromatic complexity and preserve elegance. The wine then matures on its lees for approximately six months, enriching its texture and depth. Notably, malo-lactic fermentation is omitted to retain the wine's natural acidity and crispness, culminating in a refined expression of this grape variety’s distinctive character.
